7-Eleven Store #40317 A, 1205 Horseshoe Pike, Downingtown, January 18. Fail. The front sneeze guard is missing from the cold toppings bar. Exposed products (2) were discarded at the time of inspection. Do not keep exposed products in the toppings bar until the proper sneeze guard(s) are installed. The temperature of milk in the Melitta Cappucino Machine measured 51° F. Product was discarded on site. Time/Temperature Control for safety food held in cold storage must be 41° F or below. Discontinue use of this unit until repaired and maintaining safe TCS food temperatures. Temperatures are to be monitored daily. Thoroughly clean the following food contact pieces of equipment: Tongs on preparation table, heavily soiled and encrusted; Cutting board; spots of black discoloration. Ensure both are washed, rinsed, sanitized and air dried immediately. Clean the following: Handwashing sink/preparation area; empty drink containers, windshield cleaner, expired Herr's Dips, personal items (pursue, etc...), papers, etc... Organize and clean. Provide a designated area for keeping personal products coats, purses, etc. This area is to be separate from food storage. Provide a designated area for keeping products to be returned. Keep chemical products stored in their designated areas away from food/food preparation areas. Duke undercounter cooler; dirty interior. Clean oven; grease on window and dirty handles. True 2 door cooler; mold on shelving. Clean all within 24 hours. Clean the following: Walk-in cooler floor, disorganization of beverage products and loose debris; Walk-in freezer floor, cardboard and product containers on the floor; All FRP wallboard in the food preparation area/hallway, discoloration and splatter. Clean all structure within 24 hours and maintain in a clean and sanitary state. Soda Bag-n-Box Flooring; syrup. Rear storage hallway; excessive items on floor; remove any unnecessary items from the store. Clean all. Maintain in a neat and clean state. Thoroughly clean and disinfect the restrooms. Observations: Male trash can overflowing onto floor, dirty toilets and dirty handwashing sinks. Toilet rooms are to be cleaned and disinfected a minimal of 1 times per day. Periodic checking/cleaning throughout the day is encouraged. Clean immediately.

Arianna's Gourmet Café, 323 E. Gay St. West Chester, January 18. Fail. In kitchen, remove all orange & black plastic milk crates. These types of crates are not easily cleanable and therefore cannot be used for storage of food or food contact equipment. In kitchen, clean all wall-mounted white wire shelving and wood shelving. Clean the floors & air gaps underneath all food service equipment, especially at the floor/wall juncture. Clean the wall beside the electric range oven. Repaint if needed. Remove the tabletop fryer units from the facility as no frying may be conducted due to lack of hood. Note: Units were not in use but were observed in storage. There is no Chester County Certified Food Manager (CFM) as required. Complete CCHD-approved food safety course, complete CCHD CFM application process and post CCHD CFM certificate in public view.

Bar area. Seal the junctures between the sinks and wall. A stainless steel transition piece will need to be installed between the three compartment sink and wall. The juncture between the hand sink and wall can be sealed using caulk. Correct before opening to the public. Seal the floor-wall juncture in the following: Bar Interior. install cove base around the interior juncture between floor and bar wall; Bar Exterior, seal the juncture between the floor and bar wall using a cleanable caulk; Pizza area, seal the front cabinet to the wall using an approved cove base. Gallagher's Country Tavern, 3639 Schuykill Rd. Spring City, January 18. Pass. At the bar, the 3-door kegerator has some liquid is accumulating in the bottom of the unit. Clean the liquid out of the unit and maintain in clean condition. The hood and the areas around the cook line equipment have a buildup of grease and grime and need to be cleaned, especially under and behind the equipment. Within a week, send the inspector proof of the hood and cook line being cleaned (such as a picture or a confirmation email showing that a cleaning has been scheduled. The handwash sink by the kitchen was blocked by several boxes and was not easily accessible. Boxes were removed. Keep the hand sink unblocked at all times.

Inn at St. Peter's Village, 3471 St. Peter's Rd. PO Box 154, Saint Peters, Follow-up, January 18. Fail. At the bar dishwasher, chlorine sanitizer levels could not be measured. Dishwasher must be repaired and must be dispensing sanitizer at 50-100 ppm. Until dishwasher is repaired, wash bar dishes at the kitchen dishwasher. At the door by the ice machine, the door sweep is degrading and there are several gaps which could allow entry of insects or rodents. Repair door to close all gaps. In the kitchen near the door leading outside, and inside the dry storage room, the coving at the floor/wall junction has fallen off the wall in several areas. Repair or replace missing or loose coving.
JT Wilder BBQ, 6 S. Lakeside Ave. Berwyn, January 18. Pass. Observed 2 cartons of eggs stored above ready-to-eat foods in the 2-door cooler. Eggs were placed below RTE foods by the person in charge to prevent potential contamination. Observed multiple squeeze bottles of sauces without labels of the common food in the bottle. Ensure all food storage containers are properly identified to avoid any potential contamination with allergens. Observed silicone spatula/scraper to be in disrepair. PIC discarded spatula to prevent pieces from potentially getting into food products. Replace any utensils in disrepair. Mops are not being hung to air dry. Install mop hangers to prevent potential pest harborage in wet mop heads.
Mi Placita Mexicana, LLC, 606 S. Union St. Kennett Square, January 18. Pass. Mold was observed on flan in sales case. Flan was discarded. Peeled garlic in a Ziplock bag was observed in refrigerator. This garlic is being peeled and bagged in the W. Grove store. You are not permitted to handle and bag the garlic or cut fruits as you have no warewashing facilities. Garlic was discarded. No date markings were found on flan and cakes in refrigerator. This is a repeat violation. One flan had mold on it. This demonstrates that you are not discarding foods within 7 days of date made. Contact your flan and cake vender to supply dates. If you do not have dates on food, you may not sell it.
The Naked Olive, 759 W. Cypress St. Kennett Square, January 18. Pass. Cooked salmon (on a plate) and cheese were observed sitting on top of other food pans in the top of the bain maries. Salmon was 50°F - it was discarded. Foods may not be stacked on top of each other in these units. All food must be in a bain marie pan and placed in a the cold well of the unit or placed in the lower storage area. Falafel that was thawing in the walk in was not re-dated when it was removed from the freezer. Foods must be dated with date made. If frozen and then thawed. You must re-date food with date it was removed from the freezer. Foods are reportedly frozen the same day they are made - be reminded the thaw day is then day 2 of the 7 days total you have to use the product. An irreversible registering temperature indicator or thermometer for measuring the utensil surface temperature in the high temperature dishwasher is not available. Obtain and use daily to ensure a dish surface temperature of 160°F or more is achieved in rinse. Ensure staff check the glass dishwasher every morning and log temp on the thermometer. The thermometer must reach a minimum of 160°F. No Cl was detected at the dishwasher. A new bucket of sanitizer was installed and a residual of 50ppm was detected during the final rinse. Log book had not been completed for several days. Staff must check the machine each day to ensure Cl is detected and log the result. Clean the following: Interior of the kitchen ice machine - this ice is only used for ice buckets and not for consumption; Wall across from hood and above glass dishwasher - dusty. Must submit for a CCHD certificate. Paperwork was emailed.

Repair within 5 days. Floor throughout facility is in need of cleaning. Clean floor including under equipment within 3 days. Floor tiles in back ware-washing room were observed damaged or missing. Replace damaged/missing floor tiles within 30 days.
Saint Peters Bakery/Warwick, 3441 Saint Peters Rd Saint Peters, January 18. Pass. A container of cream cheese frosting was date marked at 11/21, which was beyond the 7 day limit. Container was discarded. In the prep top, a paper cup of cut strawberries was stored inside a container of strawberries, which could potentially contaminate the berries. Cup was discarded. Store foods only in food-grade, sanitized containers, and do not store food containers directly on top of foods. In the walk in, a container of maple syrup was observed to have mildew collecting on the outside of the container. Container was discarded. At the prep top, the fans in the lower section of the unit were covered by dust and debris, and the air was not freely circulating. Clean fans by the end of today to allow for free air circulation. The unisex bathroom is not provided with a covered waste receptacle for sanitary napkins. Place a covered waste receptacle in the bathroom within a week. In the bread area, along the wall with the sheeter and the wall with the window, there is a dust & debris accumulating under the equipment. Clean the floors under the equipment by the end of the day.

Teo's Pizza & Grill, 7887 Hickory Hill Rd. Oxford, Follow-up, January 18. Pass. The quaternary ammonium concentration in the sanitizing solution of the 3-bay warewash sink was less than 200ppm, rather than 200ppm-400ppm as stated on the manufacturers use directions. Additional sanitizing tablets were added- observed 200ppm. Manufacturer's label requires 1-2 tablets per 1 gallon of water. It appears you will need 10-12 tablets for the sanitize compartment at 3/4 full. Ensure proper sanitizing solution concentration at all times. Replace light in room with 3 bay sink. It should be noted that other lighting is provided in this room.

The orange juice was removed from the sales refrigerator due to lack of proper labeling & a consumer advisory. Cartons of eggs observed in sales refrigerators not labeled. Remove from sales shelves until proper labeling is provided. Fruits in liquid are being repackaged on-site and placed in the grab and go refrigerators on the sales floors. These are not properly labeled. Provide proper labels containing the following information: Name & Address of Manufacturer; Name of Product; Keep Refrigerated Statement. This product must also be dated and consumed or discarded within 7 days of preparation. Product was removed from sales floor immediately. Proper labels for the freshly squeezed orange juice were not provided. Provide proper food labels for the freshly squeezed orange juice containing the following information: Name & Address of Manufacturer; Name of Product; Keep Refrigerated Statement; Consumer Advisory. This product must also be dated and consumed or discarded within 7 days of preparation. Provide sample label for review prior to resuming sales of freshly squeezed orange juice. Observed customer self-service containers of freshly squeezed orange juice with no consumer advisory statement as required. Since the orange juice is not pasteurized to kill harmful bacteria a consumer advisory must be provided on the label to inform customers of the risk of consuming potential harmful bacteria that may cause serious illness in children, the elderly, and persons with weakened immune systems. The orange juice was removed from the sales floor. Prior to selling freshly squeezed orange juice provide labels with a consumer advisory for review. Broken display tray observed. This was discarded on-site. Ensure all trays are maintained in good repair. In toilet room, place toilet paper in holder.

Observed an in-use knife stored between between equipment along the main cookline, which is an area not easily cleanable. Discontinue this practice. Wash knives and store in a sanitary manner. Note: Corrected on site. Wiping cloths used on food contact surfaces (such as cutting boards) must be "wet" and stored in a container of sanitizer solution. Clean and sanitize the interior of the ice machine and the ice scoop. Ensure handle of ice scoop remains above ice (or is stored outside bin) to prevent contamination. Throughout kitchen, hanging fly control devices were found suspended from the ceiling over food service equipment, risking contamination. Remove traps. Aurora Pizzeria & Pasta Kitchen, 27 Jenners Village Center, West Grove, January 17. Pass. Observed food stored directly on the floor inside the walk-in freezer- food containers were placed at least 6 inches above the floor during this inspection. Ensure all food is stored at least 6 inches above the floor at all times. Loose rubber door gaskets observed on the walk-in freezer door. Make necessary repairs. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0ppm, and not 50-100 ppm as required. The sanitizer was primed during the inspection- observed 50ppm-100ppm. Check sanitizer concentration daily at the mechanical dishwasher. The water temperature of the wash compartment of the manual warewashing equipment was 92°F, rather than not less than 110°F, as required. Maintain wash solution temperature at 110°F at all times. Observed food debris on the deli slicer. The deli slicer was cleaned and sanitized during this inspection. Ensure the deli slicer is cleaned and sanitized after each use- maintain in a clean and sanitary condition at all times. Posted CCHD CFM Certificate is expired. The food facility operator has reportedly successfully completed a food manager exam. Complete and remit provided CCHD CFM Application.

Giordano's Pizza, 633 E. Cypress St. Kennett Square, January 17. Fail. Employees had plates of pancakes on work tables and open beverages. Remind all employees that they must eat in non-food prep areas and that all drinks must have tight fitting lids. Steak and chicken for cheese steaks with internal temp of 80-90°F was observed in pans on grill. Foods were reportedly taken from refrigeration and placed on grill. Procedure is to then fully reheat food and put back in pan on grill to be hot held. Foods must be reheated quickly. Facility was already open for business and meats had not been reheated for service. Meats were reheated (over 165°F) and placed back in pans to stay hot on grill. Remind staff to heat all foods for hot holding quickly and before facility opens for service. Wings cooked yesterday were found in the walk in cooler in large containers. Wings had an internal temp of 46-49°F. It was determined that wings were not properly cooled from the day before. Wings were discarded. Wings must be cooked and cooled from 135°F to 70°F within 2 hours, then from 70°F to 41°F in 4 more hours. Wings will now be cooled on rack, temp checked to monitor cooling, placed in shallow bins, placed in walk in freezer for an hour to quickly cool, then placed in walk in cooler to finish cooling. DO NOT cover wings tightly while cooling!. Sandwich prep unit was 48°F, brown walk in (47°F), and 1 door unit by pizza oven (43°F). All foods in these units that were out of temp were discarded. All units were emptied and may not be used until serviced and capable of maintaining foods at 41°F or less. Salsa and cocktail sauce with Dec. made on dates were discarded. Ready to eat foods must be used within 7 days of date made. If you wish to hold foods for longer, you must submit them for testing to prove they are still safe beyond 7 days. Contact lab for testing info. Tuna observed thawing in reduced oxygen or vacuum packaging. These packages must be opened to allow oxygen to enter prior to beginning the thawing process. Thawed fish was discarded. Staff were directed to open all ROP fish for thawing. Replace torn door gasket on pizza dough refrigerator. Sports bar - supply test strips for sanitizer. Sports Bar: Hot water at the 3 bay sink was 108F after running for several minutes. Increase hot water heater temp to ensure water is minimum 110°F. Downstairs bar: Soda gun must be taken apart and wiped clean. Wash, rinse and sanitize red nozzle and wipe dispensing area with sanitizer to keep clean. Clean the following areas: Floor under cookline; Area between grill and deep fryer; Underside of heat lamp shelf; Ceiling throughout facility - dusty - if panels are replaced - they must be washable; Sports Bar: Server station hand sink. Food employee observed storing clean food equipment while wet, and not allowing time for draining and/or air-drying. Remind employees to allow pans to dry before stacking. The handwash sink located near the pizza prep station does not have water at a temperature of at least 85°F. Hot water knob is broken and water is turned off. Supply hot water at all times. Sports Bar: There are 2 hand sinks behind bar. One may be used as a dump sink. The smaller sink is to be the hand sink - place soap and paper towels/napkins at that sink. Remove the liquor bottles from in front of that sink. Remove soap from dump sink. Kitchen: Wash bay of the 3 bay sink leaks. Sports Bar: 3 bay faucet leaks at the base. Repair leaks. Numerous chemical bottles were not labeled throughout the facility. Ensure bottles are labeled with the common name of the chemical inside. At least one full time employee must obtain a CFM certificate and a Chester County certificate. Local course info emailed.
Green Street Grill, 150 E. Pennsylvania Ave. Downingtown, Follow-up, January 17. Pass. A few boxes and pans of food observed on the floor inside the walk ins. Proposing to install a used, 1 year old Bally NSF listed walk in refrigerator outside in the back parking lot next to the building. It will be weather proofed, and NSF listed shelving and/or dunnage racks will be provided. Please check with the building inspector for Downingtown Borough to see if you need a permit etc. This is to be installed within 30 days- if approved by the Borough and weather permitting. This unit can only be used to store Pre-Packaged Boxed Foods. It cannot be used to cool or store cooked pans of foods since it is a long uncovered walking distance from the back of the building to the front. If you cannot install this unit outside please let me know as soon as possible so we can discuss other plans. Facility does not currently have a mop or utility sink to fill and empty mop buckets. Mop or utility sink must be installed by 12/1/24. Until the mop sink is installed, mop buckets must be filled without the hose touching the water inside the mop bucket, and mop buckets must be emptied into an approved sewage system. Informed that it is to be installed where the small chest freezer is located in the kitchen next to a 1 door freezer. This is approved. You may need a knee wall between the sink and freezer. Please install mop hangers over the sink as well. If it cannot be installed here - please inform so another location can be discussed for approval.
Hibachi Of Valley Forge, 240 W. Swedesford Rd. Berwyn, Follow-up, January 17. Pass. Food utensils for rice dispensing area observed stored in a container of water which is not maintained at 135°F. Literature posted on site by Yin in Mandarin informing staff to replace spoon and water every 4 hours, weekends at 4 & 8 p.m. and weekdays at 6:30 p.m. Observed wet wiping cloths in bar and sushi prep area, not being stored in sanitizer solution. Yin corrected on site - Re-train staff to set up sanitizing buckets at all locations, including bar area, sushi area, and cook line. The following equipment not observed in good repair: Walk in freezer door is not closing in its entirety due to door jamb and ice build up. Assess and determine a long term solution. A blue pitcher of soy for hibachi station, a food contact surface, was observed to have food residue and was not clean to sight and touch. These containers need to be washed/rinsed/sanitized once empty. Staff may not refill without first completing an adequate ware wash. Staff instructed to do so. Re-train staff. As per the manufacturer's label, this must be kept refrigerated. Discard immediately. Prepackaged flan and gelatin observed in the refrigerator not date marked. Ensure packaging is date marked. Refrigerator near sales register: Observed pre-packaged flan, and gelatinas without proper food labels. These items are from Las Rosas Bakery in Philadelphia. Some pre-packaged flan containers were properly labeled. Provide food labels for above noted items. REPEAT VIOLATION: Food facility does not have a three-compartment sink for manual warewashing of tongs used to dispense baked goods. Deli tissue must be used for dispensing loose baked goods. Cut fruit observed in ziploc bags in the refrigerator next to the sales register. It was indicated that the fruit was cut on-site in the produce room. There are no handwashing or 3-compartment sinks in this room for proper preparation. Discard immediately. Facility is only permitted to sell prepackaged foods. No food preparation or repackaging may be done on-site. Defrost Tocumbo slide top freezer and maintain in clean condition. Provide toilet paper immediately. This was corrected on-site.

Utensils must be placed in holder with handle side up to prevent hand contact with service end of utensils. This was corrected during the inspection.

An irreversible registering temperature indicator or thermometer for measuring the utensil surface temperature in the high temperature dishwasher is not available. Obtain and use daily to ensure a dish surface temperature of 160°F or more is achieved in rinse. The preparation sink does not have an adequate air gap of at least 1 inch, between the water supply and flood rim of the sink. Install an air gap for the preparation sink. The lights were not working in the walk-in cooler and walk-in freezer. Fix the lights in both the walk-in cooler and the walk-in freezer. Ceiling tiles missing near the door, and need replaced. Replace the missing ceiling tiles.

Discard immediately. Ensure to monitor for moldy foods. Observed an unapproved bug zapper and bug spray. Remove from the facility immediately to prevent potential contamination. Ensure any pest control devices are used and/or installed by a professional pest control operator. Hand sink across from the register did not have paper towels. Provide paper towels immediately. Mops are not being hung to air dry. Install a mop hanger and hang mops to prevent the potential of pest harborage in wet mops.
